First Forever Oatmeal Cookies




Who doesn't love homemade cookies? Come join Blythe Alexander and her friend, Alice, as they drink hot tea and share cookies from the cookie jar in First Forever: Prequel to Second Chances.
This is my personal recipe for Chocolate Chip Oatmeal Cookies. I hope you enjoy them as much as my family does. And don't be surprised if none of them make it into the cookie jar.

1 1/4 cups whole wheat pastry flour
1 cup old fashioned oats
1 teaspoon baking powder
1 teaspoon salt
1 stick unsalted butter, softened
1/2 cup granulated sugar
1/2 cup light brown sugar, packed
1 teaspoon vanilla
2 large eggs
1 cup semi-sweet chocolate chips
1 cup raisins

In a separate bowl, whisk dry ingredients. 
In a mixer bowl, cream butter and sugars. Mix in eggs and vanilla. Add dry mixture. Add in oats, chocolate chips, and raisins. Stir until well-combined. 
Drop by tablespoon onto parchment-lined cookie sheet.
Bake for 10-12 minutes @ 375 degrees.
Recipe makes about 3 dozen.
