Misty Sumner's Recipe for Scotcheroo Oatmeal Cookies
- 1 1/4 cup all-purpose flour
- 1 tbsp baking powder
- 1/4 tsp salt
- 3 cup old-fashioned oats
- 3/4 cup brown sugar
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 stick unsalted butter, softened
- 1/2 c chunky peanut butter
- 5 1/2 oz butterscotch chips
- 5 1/2 oz semi sweet chocolate chips
Beat butter and peanut butter with both sugars in a mixing bowl until light and fluffy. Add eggs and vanilla. Mix well.
Combine dry ingredients in a separate bowl. Add dry ingredients, mixing until combined.
Stir in chocolate chips and butterscotch chips.
Drop dough by tablespoon onto parchment lined cookie sheet.
Bake at 375 degrees for 8 to 10 minutes.
