Just Like Whoopie Pies

(Cupcake Alternative)

Ingredients:
  • Box spice cake mix (Option-Use yellow cake plus *pumpkin pie spice, see recipe below)
  • 15 ounces canned pumpkin puree
  • 8 ounces cream cheese
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Directions:
  1. Preheat oven to 350°.
  2. Pour contents of pumpkin can into mixing bowl. 
  3. Add dry cake mix.
  4. Mix well.
  5. Line cupcake pan with cupcake paper liners.
  6. Using large scooper, add cake mixture, one scoop to each cupcake paper.
  7. Bake for 12 to 14 minutes.
  8. Remove to rack. (Use caution. Muffins will be hot.)
  9. While muffins cool completely, combine cream cheese, vanilla, and powdered sugar to mixing bowl. Beat until well combined and fluffy.
  10. Spread icing on cooled muffins. 🧁

*Pumpkin Pie Spice
  • 1 tsp cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground ginger
  • ⅛ tsp cloves
